A Yummy Summer Salad

Tonight, in honor of Cinco De Mayo I made a light south of the border salad with homemade dressing...it was yummy...so yummy that I didn't have time to take a pic before we ate it all! Jadyn picked the beans out and ate them :) On a side note ESPN is showing the Red Sox/Detroit Game. Life is Good. For the Salad
Romaine Lettuce
Tomatoes
Avocado
Bell Pepper
Corn
1 Can Black Beans drained and Rinsed
Shredded cheese of your choice

For the Dressing
4 tablespoons extra virgin olive oil
3 tablespoons of a juiced lime
2 tablespoons Rice Wine Vinegar
Zest of 1 Lime
Minced fresh cilantro to taste
1 1/2 tsp honey or agave nectar
Sea Salt and Pepper
